  • The 12 year old, aged in American oak barrels for a minimum of 12 years.
  • The 17 year old, aged in Spanish Oloroso sherry cask for a minimum of 17 years.
  • The 21 year old limited edition expression that was released in 2013 and 2014 only (only 4,000 bottles were produced). This is also made at Suntory’s Yamazaki distillery but differs slightly from the other expressions because it doesn’t have any grain whisky added to it! It’s made entirely from malted barley and single malt grain whiskies distilled by Suntory’s Hakushu Distillery on Hokkaido Island (Japan).

Hibiki Japanese Whiskey is a blend of malt, grain and single malt whiskies. It has a full bodied, smooth and creamy texture. It’s aged in a blend of American oak casks and Japanese Mizunara oak casks that give it its distinct taste profile. The resulting whiskey has sweet, dry and spicy notes with hints of vanilla and cinnamon–a perfect complement to many dishes from Japan, including sushi!

Hibiki Japanese Whiskey was created by Masataka Taketsuru (founder) after he studied distillation methods at University College London (UCL). He then returned home to teach these skills at his father-in-law’s brewery before creating Nikka Whisky Distilling Co., Ltd., now known as Nikka Coffey Malt Whisky Company Limited.

The Hibiki Japanese Whisky range consists of five expressions. The first is the Hibiki Harmony, which is a blend of malt and grain whisky that’s aged in ex-bourbon casks for 12 years. The second expression is the Hibiki 17 Years Old, which has been aged in sherry casks for 17 years before being bottled at 45% ABV (90 proof). The third expression released by Suntory was their Hibiki 21 Years Old Limited Edition 2017 release; this particular bottle contains 22% more alcohol than other bottles in its class because it was bottled at 54% ABV (120 proof).

The fourth addition to this collection was introduced last year: Hibiki 30 Years Old Limited Edition 2018 – it’s also 46% ABV but comes with some extra goodies like an engraved wooden presentation box and stand! Finally, there’s also a limited edition version called “Hibiki 50th Anniversary” which combines both grain whisky from Yamazaki Distillery as well as malt whisky from Hakushu Distillery; each batch comes with its own unique label design based off different eras throughout Japan’s history!

In 2015, Hibiki Japanese Whiskey Gold Medal won a gold medal at the San Francisco World Spirits Competition. This expression is a blend of three different grains: Yamada Nishiki rice (a high quality grain), Hokkaido wheat and Koshihikari rice. It’s bottled at 40% alcohol by volume and has notes of honeydew melon, vanilla bean, sweet caramel and spice to it.
